What’s the consensus on sealing off weathering that’s done with acrylics etc. Do people use clear coats or a gloss finish... or just leave weathering as is?

 

I’m guessing the originals didn’t have a top coat.

No need for a top coat. Once it's dry it takes some real effort to remove it, so it's all good.

 

The originals on set were dirt and oil and grease and had to be re-done during filming.

I weathered using acrylics, the  to seal it got a can of the cheapest nastiest hairspray from coles (I see you're an Aussie).  Worked perfectly so far.
